Pakistani Biryani is a popular rice dish made with aromatic spices, meat (chicken, beef, goat, or fish), and basmati rice. Here's a traditional recipe to make Pakistani Biryani:


Ingredients:


1 1/2 lbs chicken (or beef or goat), cut into small pieces

1 1/2 cups basmati rice, washed and soaked for 30 minutes

3 medium-sized onions, thinly sliced

4 medium-sized tomatoes, chopped

4 green chilies, chopped

1 teaspoon ginger paste

1 teaspoon garlic paste

1 teaspoon red chili powder

1 teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon cumin powder

1/2 teaspoon garam masala

1 teaspoon cumin seeds

1 cinnamon stick

4 green cardamom pods

4 cloves

4 black peppercorns

4 black cardamom pods

4 bay leaves

3 cups chicken stock (or water)

1/2 cup plain yogurt

2 tablespoons lemon juice

1/2 cup ghee (or oil)

Salt, to taste

2 tablespoons chopped fresh cilantro (optional)

2 tablespoons chopped fresh mint leaves (optional)

1/2 cup fried onions (optional)

1/2 cup raisins (optional)

1/2 cup slivered almonds (optional)

Food color, a pinch (optional)


Instructions:


In a large pot or deep pan, heat the ghee (or oil) over medium heat.

Add the sliced onions and fry until golden brown, about 10 minutes.

Add the ginger and garlic paste and cook for another 2 minutes.

Add the chopped tomatoes, green chilies, red chili powder, turmeric powder, coriander powder, cumin powder, and garam masala. Cook for another 5 minutes.

Add the chicken (or beef or goat) to the pot and cook for 10-15 minutes or until browned.

Add the cumin seeds, cinnamon stick, green cardamom, cloves, black peppercorns, black cardamom, bay leaves, and food color (if using). Cook for another 2 minutes.

Drain the soaked rice and add it to the pot. Stir well to mix with the chicken and spices.

Pour in the chicken stock (or water) and bring to a boil.

Reduce the heat to low, cover the pot, and let the biryani cook for 15-20 minutes or until the rice is cooked and the liquid has been absorbed.

In a small bowl, mix together the yogurt and lemon juice.

Once the rice is cooked, add the yogurt and lemon juice mixture to the pot and stir well.

If desired, add the chopped cilantro, mint leaves, fried onions, raisins, and slivered almonds to the biryani and mix well.

Serve hot with raita or chutney.
